Mom's Meatloaf recipe 1 lb. ground beef 1 egg Onion, cut up (to taste) Seasoned bread crumbs (Italian) Salt/pepper Mix all ingredients in a bowl (by hand). Move to casserole dish, or loaf pan. Top with ketchup. Bake 350 - 1 hour or until center is not pink. * if you like your meatloaf drier, use more breadcrumbs; for a moister meatloaf, use less. (by Marie Stahlman) |
Vegetarian Alternative for Ground Beef The best product out there for making meatloaf, meatballs, tacos, sloppy joe, etcetera, is Gimme Lean Ground Beef Style. Healthy and unbelievably delicious. Aunt DoDo's Congo Bars recipe 2-3/4 cups sifted flour 2-1/2 teasp. baking powder 1/2 teasp. salt 2/3 cup of shortening 1 lb. of brown sugar (light) = 2 cups 4 eggs 1/2 cup of nuts 1 - 7 oz. chocolate chips 1 tsp vanilla |
Mix and sift dry ingredients, melt shortening and let cool. Add brown sugar, stir until well mixed. Allow to cool slightly. Add eggs one at a time, beating well. Add dry ingredients, nuts, chocolate chips and vanilla. Pour into a greased 15x10 cookie sheet. Bake 30 minutes at 350 degrees. When cool, cut into bars (yields) 35 bars. Insert tooth pick.
